Scottish variety (aka Scotch Flag) introduced in the early 1800s. Enormous leeks that are 9-15" long by 2-3" in diameter. Tender white stalks, dark blue-green fan-shaped leaves. Mild flavor, stands winter well.

Leeks are most often sliced thinly before being served. You can also substitute leeks for garlic or onions in recipes, but take care to chop them finely as their leaves possess fibers that can ball up while chewing.
